Here's the recipe –

Ingredients:

1 quart vegetable oil (for deep frying)
BATTER:
1 cup water
2 tbsp vegetable oil
2 tbsp sugar
1/2 tsp salt
1 cup flour
TOPPING:
1/2 cup sugar
2 tsp cinnamon

Directions:
Prepare the topping by mixing the sugar and cinnamon together. In a small pot, add the 1 cup of water, 2 tbsp vegetable oil, 2 tbsp sugar, and 1/2 tsp salt, and bring it to a soft boil. Remove it from the heat and immediately stir in the flour. Mix well with a sturdy spoon for about 30 seconds. Do not overmix and then let the dough cool for 10 minutes.
Use a large star tip (I'm using a ateco 828 5/8" star tip – link below) and fill a piping bag with dough. Heat up the 1 quart of vegetable oil in a large pot and bring it to 375º F. Pipe in churro strips and deep fry for 2 minutes on each side until golden brown. Remove the churros and quickly drain on a paper towel before immediately rolling into the cinnamon sugar topping. Enjoy! I like to dip into caramel or chocolate sauce

*makes 1/2 dozen
