    Try to keep fire temperature constant ,make sure only up to about 220
    degree, do not overheat, otherheat may cause fire. The one you mentioned
    deep fry in 1 pint of oil or so on high pressure burner,it is possible and
    save waiting time from the cold to extra hot oil,but you should begin to
    deep fry before the large amout of smoke come out from the wok.

    Use corn flour or potato starch to cover chicken. The sauce is water mix
    with vinegar and sugar.
