SUPERSONIC SNACKS: Deep Fried Bitter Melon

A Youtube first!!! Talk about a healthy, quick & delicious snack! This dish is so easy to make and bitter melon has so many health benefits such as:

– very low in calories (17 calories per 100g)
– contains phyto-nutrients (polypeptide-P) which lowers blood sugar levels
– contains folates, which helps reduce incidence of neural tube defects in newborns
– excellent source of vitamin A & C, beta-carotene, lutein, niacin, pantothenic acid, pyridoxine, iron, zinc, potassium, manganese, magnesium, and zea-xanthin which all in term helps combat cancer development
– stimulates and relieves digestion and constipation problems

Ingredients:
1 bitter melon
tempura batter mix
sugar
crushed red pepper

Directions:
Mix 1/3 or 1/2 cup of tempura batter mix with 3-5 teaspoons of water. Add 1 teaspoon of sugar and mix thoroughly. Pour the bitter melon into batter mix and ensure they are coated thoroughly. Place in hot fryer on high (375F) for 3min. Serve when oil drained and still hot and crunchy.
