CRISPY FRIED POTATO CAKES

4 medium size potatoes, peeled and grated

Soak grated potatoes in cold water for 5-15 minutes. Remove potatoes from water and squeeze out remaining water from potatoes. Set aside.

In large mixing bowl add…

1 egg
1/4 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon fresh cracked pepper
1 teaspoon fresh clive or parsley, chopped

Add potatoes into egg and flour mixture. Combine well.

In large frying pan over medium-high heat add…

1 tablespoon canola oil

Turn heat down to medium add…

large spoon fulls of POTATO CAKE mixture to frying pan. Fry potato cakes 2-3 minutes on each side.

Serve immediately.

    Great recipe!! Just tried it. Some tips – use a colander and a bowl
    slightly smaller than the colander. Grate the potatoes directly into the
    bowl (eliminates wax paper). Then fill the bowl with water. After
    de-starching dump into colander and rinse with more water. Put the
    now-emptied bowl into the colander to press out the water. If grating
    onions, mix with the potatoes at this point and press both out as onions
    add a lot of water back in. Use paper towels if needed afterward.

    Can we do the same thing without grating the potatoes but using mashed
    potatoes?

      +Lee Lee NO! Cooked potatoes are mashed!! Uncooked potatoes (used for this

    When I drain the potatoes I pour them water and all in a colander and press
    on the potatoes to eliminate as much water as possible, then I spread them
    on an old towel and pat as much water out as I can. I like to add onions
    and these freeze well…great for when you want something in a hurry!!

    Done eating with mine too. It is also delicious if you come up with sauces
