Chilaquiles are known throughout Mexico to be the best, most reliable hangover cure that exists (especially when paired with a michelada, wink wink!). They are probably one of the simplest Mexican breakfast recipes around, too. It starts out similar to making migas, with frying some corn tortillas until lightly crispy. Unlike migas, though, chilaquiles require zero chopping as long as you have the salsa already made, which makes it a much safer option in the kitchen for a person who may or may not be so hungover that she (or he) has double-vision and really probably should be at a hospital.

    Love it!! I like to see different variations of this recipe! We have a big
    hispanic population here in Colorado, yet it is damn near impossible to
    find a good chilaquiles. I’m going to have to just make my own. PS, your
    adorable!! I think I need to adopt you as a sister! LOL

    on the side they called it chilaqules yeah they call it chilaqules because
    that’s what they call it in Mexico?

    oh man…. what’s next? having some white guy or girl cooking ranchero
    beans…. or maybe menudo?… they already stole the crunchy taco (taco
    dorado) and turn it into a freak-frankeinstein thing they call taco bell…
    they also open the chipotle restaurant and destroy the burrito… its not
    authentic meixcan food…. now chilaquiles…

      but Mexican food too. We don’t want anyone cooking foods outside of their
      own culture.

    This is not genuine chilaquiles. Mexicans who make real chilaquiles don’t
    use tomato sauce out of a can. They roast peppers and onions and chili’s
    then blend it all to make a unique incredible sauce. So many people post
    recipes that are very average. Why bother if you can’t make them great.
    There are so many great cooks on line. I don’t bother with these wanna
    be’s.

    people… please.. there are plenty of Mexican videos BY MEXICANS teaching
    you the authentic preparation of chilaquiles.. what is going on for crying
    out loud..

      +jesus7es7dios7 Big deal, you don’t have to be Mexican to make Mexican
      food. Hell I’ve known plenty of Mexicans who are excellent at making French
      food, better than some French cooks I know. You don’t have to just stick
      with your own nationality when it comes to cooking.

      Besides that, I think she is adorable and makes cooking simple and
      straightforward!
