Ingredients:
8-12 oz sole, flounder, or catfish fillets
1 tsp.sea salt
¼ tsp.freshly ground black pepper
4 oz all purpose Flour
6 eggs beaten with 1 oz. of milk
8 oz. panko bread crumbs
1 tony caceres cajun seasoning or old bay
Method:
Preheat oil to 350 degrees F using candy thermometer
1. Wash fish and pat dry with towels
2. Season fish and dredge in flour
3. Dip into beaten egg mixture and then bread with crumbs
4. Heat oil to 375 degrees F and add fish when oil is hot
5. Cook until golden brown on all sides
6. Drain on paper towels
7. Serve with sauce of choice

Nice video….what kind of thermometer are you using, and where can I
purchase one?
The thermometer for frying is actually a candy thermometer – you can
purchase it over amazon.com or walmart.com or at William and Sonoma, Target
and Kohls had them too in their kitchen section.

You don’t season your fish beforehand?
The seasoning is in the flour not directly on the fish – this is done
mainly to keep the salt away from the protein to avoid the coating to fall
off because of the salt drawing out the liquid out of the seafood.

Atlantic Croaker is a sliver-pink fish most likely from the Chesapeake Bay,
caught between spring and fall. This fish would work too its flesh is firm
so it would work for frying just fine
