+Beeht Finally, a comment with some sense. You owe Berta an apology.

Chicken fried “steak” is always made from beef not chicken, don’t ask me
why, but that’s what the dish is named.

I’ll have the chicken, I’ll have steak and the chicken fried steak.
Ugh, people are so dense.
Nobody claimed it was chicken. “Chicken Fried” simply refers to the manner
in which it is fried. It’s much like the term “French Fries”. People
complain because they’re not from France, but “French” doesn’t even refer
to the country of France, it refers to the manner in which the potatoes are
sliced. To “french” is to cut into long, thin strips.
I’m not French, but I kiss that way.
+Cleve Carpenter I prefer the term “freedom Fries”
+Ry.the_Stunner thats right damn it gimmie some O’ them ‘Merican fries…
Just because the “french cut” is named after France doesn’t mean the fries
are. French Fries specifically refer to the type of cut (regardless of
whether or not the cut is named after France). What we know as French
Fries originated in Belgium, not France.
+Ry.the_Stunner I’m afraid what you’ve said is just not logical. French
Fries IS a reference to the way ‘chips’ are cooked in France. They call
them ‘frites’ or ‘frits’ they are long, thin deep or shallow fried potato
segments. They were doing ‘frites’ or French Fries before the US was
established. It is the way other countries refer to the way potatoes
segments are cooked in FRANCE. Get it? It’s the same as ‘Frenching’ lamb
chops or standing rib roasts, or cuts of pork for roasting – the removal of
the chine bone and scraping all the meat and tendons and facia from the
long rib bones is… “Frenching”… of course it refers to the country.
Take a look at the classic French cook book Larousse Gastronomique
(published in 1938) you’ll find all these methods in there. English chef,
Robert Carrier, back in the 1960s in his books refers to ‘Frenching’… he
wasn’t talking about how they cook in Albania or Alabama!
So, as to ‘Chicken Fried Steak’. It’s originally a European dish of meat
cuts fried in chicken fat or ‘schmaltz’. The US being made up of mostly
European immigrants brought their styles of cooking with them.
So, you are right… some people are so dense.
Cheers,
Bill
