How to Make Fish & Chips | Deep-Frying

This is our bread and butter. This is what we do best. We are The Chip Shop. We believe we have the best fish 'n chips in New York. We've won several awards with it. And every time I eat it, which is about once a month, I think two things.

First, this is what I wanted to open the store for and secondly, I should eat this more often, but I don't because I ate far too much of it when I first opened. I love fish 'n chips. We use fresh cod. The chips we use, they start life as potatoes. We don't use frozen french fries. Everything we make is fresh. This is what The Chip Shop's all about.

We can sink this fish a bit as well. With the chips, the process for the chips is in a nutshell. Bag of potatoes delivered. Take them downstairs. They get peeled. They get washed. They get chipped. They get washed. They get brought upstairs. They get blanched. They get chilled down. They get put in buckets. They get brought upstairs again, and then we fry them. You know, it's a whole process.

We love what we do and we love our fish 'n chips, and I'm so grateful I have a chance to show you guys what we do best. The fish oil is at 450, the chip oil is at 350. We try and do everything as authentically as possible. When I opened the store, it really was a selfish reason. I wanted to eat fish 'n chips. I wanted to go and not have the filet of fish somewhere, or a piece of frozen fish somewhere. I wanted to have the real deal.

And for the selfish reasons I opened the store and I've been here 12 years. I'm really bloody glad I opened it. At the end of the day, when I serve a meal like this, I get very happy. Chips we cut on a chipper, we imported from England. That is why I love my job. I can put fish 'n chips out to that quality and that makes me very happy.
